Krista Watkins’ journey with food waste began when her husband Rob drove over a bunch of green bananas, crushed them to a powder and thought it tasted just like flour. Little did Krista know that Rob had discovered one of the richest sources of resistant starch in the world.

Every week in North Queensland over 500 tonnes of bananas are wasted every week, being too small, an odd shape, or the wrong colour for sale, but of course perfectly nutritious. With an innovative production technique, Krista and Rob are turning millions of wasted bananas into nutritious banana flour.

Every day, Natural Evolution produces 1000kg of green banana powder in their facility in Walkamin in Far North Queensland, exporting to over 50 countries around the world and making a positive change on our Australian food waste problem, creating healthy product and helping out our Aussie farmers.
